The Sierra 2500 HD with the 6.6-liter gas V8 is a beast of an entry-level version. If you don't like the diesel V8 for whatever reason, the gas V8 will almost certainly get your jobs done.
The Sierra 3500 HD tacks on a lot more payload capacity relative to the 2500 HD, plus incrementally more towing capacity.
As with the diesel Sierra 3500 HD, the gas version offers a cheap upgrade to the DRW chassis. Unlike the diesel, though, the gas model isn't eligible for the NHT trailering package that unlocks mega towing capacity, so the gas 3500 HD DRW can only tow about as much as the SRW. The big reason to upgrade to DRW is payload capacity, which shoots up to a 7,290 pounds, best in the Sierra 3500 lineup and more than 2,500 pounds beyond the SRW's max.
Oddly, the Sierra 2500 HD 6.6T diesel's payload rating is more than 200 pounds higher than that of the Silverado 2500 HD diesel. At any rate, this diesel V8 is awesome, though it is also quite complex thanks to all the emissions-control systems.
The diesel-powered Sierra 3500 HD SRW pumps up the max towing capacity to more than 22,000 pounds. You'll need the dual rear wheel setup if you want to tow more than that.
Stick with the 2WD regular cab DRW diesel to get the range-topping 36,000-pound towing capacity — just know that when it comes to payload, the gas-powered 3500 DRW is the winner.
